This is a true LBJ Country cookbook of Pedernales Pot Luck from the people who made the history here so unique and the food so great. Enjoy!
One of my favorite times of the year in the Hill Country is spring, slipping into early summer, while it's still pleasantly cool outside...Toward sunset we gather for a casual dinner in the front yard. The buffet tables are covered with patch-work quilts, topped by centerpieces of wildflowers gathered nearby. On the serving tables homemade jams, jellies and relishes surround a "country spread" of fried chicken, ham, black-eyed peas, pickled okra, garden vegetable salad, and scalloped potatoes... We pass baskets of hot biscuits after guests are seated, and as is the custom, are invited to select for themselves... There is usually a good old-fashioned buttermilk pie -- reflecting pioneer frugality and which is still a favorite down through the many years.
