Originally published at the turn of the century, in what was probably the heyday of cake-making, it was intended to become the standard work on cakes and confectionery -- 'the finest and most trustworthy book on the subject' -- designed to be of use to both amateurs and professionals. There are recipes for all kinds of traditional Victorian cakes, biscuits and cookies, fancy goods, and petits fours, shortbreads and savoy molds, pound and slab cakes, ginger- breads, marzipan and nougat, as well as a multitude of fillings, icings and frostings for decorating the cakes. 

The illustrations in the book are remarkable examples of the photographic techniques of the time; the original publishers claimed that the high-quality full-color work was unique, with 'every illustration reproduced from the actual cake'. Only the spectacular multi-tier wedding cakes were not made specially for the book, as they were cakes that had won recent prizes at London International Exhibitions: the finest examples of the cake decorating art ninety years ago. In addition to pictures of the finished cakes, there are also close-ups of piping details. Notes for the modern baker have been included to assist today's baker in adjusting and adapting equipment and recipes.
