Description: This cookbook owes its heritage to many cooks including our modern day gourmets who so generously contributed their very special favorite recipes. The Welsh miners in nearby Gilman, the Hispanic railroad hands in Minturn and the Anglo and Greek ranchers and farmers of the Vail Valley past; all added their own history to our love of cooking.

Then came the Austrians, French, Swiss, Italians and Germans, South Americans, Texans, Midwesterners and Yankees; lured here by Vail's incredible mountain. They all have brought with them the flavors of Europe and the Americas to our kitchens.

Peter Seibert, the founder of Vail, had a dream back in 1962. Now, almost 30 years later, that dream is Vail. We hope to share some of Vail's kitchen heritage with you. The best of our cooks' choices.
