The Welsh miners in nearby Gilman, the Hispanic railroad hands in Minturn and the Anglo and Greek ranchers and farmers of the Vail Valley past; all added their own history to our love of cooking. 

Then came the Austrians, French, Swiss, Italians and Germans, South Americans, Texans, Midwesterners and Yankees; lured here by Vail's incredible mountain. They all have brought with them the flavors of Europe and the Americas to our kitchens.
