Additional Details

Description: Here are over two hundred authentic recipes from mainland China collected by Nobuko Sakamoto from three important cookbooks originally published by the government of the People's Republic: The Treatise on Famous Chinese Dishes, a series of cookbooks issued by Mao Tse-tung, who asked chefs from all parts of China to submit the recipes of their specialties, which were available in the past only to the privileged; The Cookbook of Famous Dishes from the Peking Hotel Restaurant, containing recipes for dishes that have been enjoyed by generations of diplomats and distinguished visitors who have dined at this world-renowned restaurant; The Masses Cookbook, published in China in 1966, which introduces "the new cuisine" of the Republic of China, with its emphasis on nutrition, economy and ease of preparation.

Inspired by the uniqueness and excellence of these three books, the author spent over a decade translating all the best recipes and adapting them to her American kitchen. This very special cookbook, complete with sections on equipment, techniques and ingredients, is the result of her efforts.
