Here are recipes used by members of 26 ethnic or cultural groups in Texas. Not the only ethnic groups in Texas, but representative ones. Most traditional, old-world, national dishes are not in this collection. Pioneer recipes are rarely included. What is included are recipes used by individuals today.
Many recipes here are basic to several cultures, differing only in details. There are common dishes and festival foods. Material here was collected by the research staff of the Institute of Texan Cultures.
