Additional Details

Description: Polly Zane's husband John, whose delightful illustrations grace this book, had a slight heart attack three years ago. And when he recovered, his doctor told Polly Zane, "From now on you're going to have to make a rather fundamental shift in what you cook and bow you cook it."  From then on her husband was going to have to eat fat-controlled meals -- that meant no butter, no whole Milk, and no cream, and most cheeses were out. Also, John Zane couldn't eat any shellfish, no bacon or spareribs. No fried food. No marbled steak, lamb, or pork. No creamed food. No ice cream. And no eggs. Enough to make a good cook turn pale. Enough to make one wonder what there was one could eat.

But Mrs. Zane is a woman of determination and she was determined to find a way to feed her husband healthfully and herself and their daughters happily. She ransacked bookstores and libraries, consulted doctors, asked friends for advice -- and, behold, she found it was possible to feed her family well, and with variety and pleasurably, and that it was possible for her husband to enjoy his meals, with everything from popovers and scrambled eggs to Boston cream pie.

This book is essential for anyone who has to be careful of his diet because of cholesterol problems. Not only does it contain many splendid and imaginative recipes, but it advises where and bow to shop for the necessary ingredients, and it offers, in its Appendix, a full medical discussion of the whole cholesterol picture, by Dr. Daniel Steinberg, Past-Chairman on Arteriosclerosis, American Heart Association.
