Description: Olive oil poured over a generous slice of unsalted bread and a hearty glass of red wine typify the Tuscan table. This beautiful cookbook captures the essence of Italy, so perfectly embodied in the food and landscape of Tuscany. John Dore Meis, American by birth, Tuscan by choice, has lived there for fifteen years.
From his home in the Chianti area above an olive oil mill, he has traveled widely in the region, following the seasons, meeting and talking with producers of fine wine vinegar and extra-virgin olive oil, sheep's milk cheeses, and amber-colored Vin Santo wine. He has also discovered hunters, butchers, numerous cooks and restaurateurs in the city and village alike, a nomadic beekeeper, and gatherers of everything from mushrooms and truffles to edible weeds.
A Taste of Tuscany includes recipes ranging from simple farmhouse fare to elaborate meals at Brolio Castle and Florence's famous Cibreo restaurant. There are fish and seafood recipes from the island of Elba; delicious pasta, such as spinach and ricotta ravioli; mouthwatering recipes for seasonal soups and salads, succulent roasts of lamb, pigeon, and duck; and alfresco meals associated with Tuscany's many summer feste.
