The cuisines of Southern Italy are heavily influenced by commerce with Greece, Spain, and the Middle East, lending exotic flavors that complement the more familiar pestos and tomato-based sauces.

Many of these pastas are vegetarian, others feature fish, shellfish, lamb, sausage, caviar, duck, or chicken. While not every dish is just like something mama used to make (unless mama was in the habit of cooking Linguine with Smoked Sturgeon and Shiitake Mushrooms or Spaghettini with Scallops and Goat Cheese), the authors' simple instructions and friendly tone will have even the novice cooking like someone from the neighborhood in no time.
