Description: When Tony and Ann Kischner entered the restaurant field, they encountered a fast-changing regional food scene and the beginnings of the Northwest's small but growing regional wine industry. As the manager and wine steward of Rosellini's Other Place Restaurant in Seattle, Tony met all the new regional winemakers and tasted all their releases extensively. 

When the Kischners moved from Seattle to Seaview to open The Shoalwater, they transplanted their excitement about the foods and the wines of the region and did their best to infuse it into their own restaurant. With the addition of Chef Cheri Walker to the staff, they launched into a new phase in regional food and wine preparation and service which has evolved into fine dining highlighted by their well known monthly regional wine dinners which form the basis for this book. 

Established in 1981, The Shoalwater Restaurant is located in Seaview, Washington's historic Shelburne Inn. The Shelburne, built in 1896 by Charles Beaver as his home and a coastal retreat for Portlanders, was named after a grand hotel in Dublin, Ireland and is now operated by David Campiche and Laurie Anderson. In 1911, a team of horses pulled the original building across the street to its present location, where it was then joined to a second house. The Shoalwater's main dining room now occupies the lower level of the original home. Named to the National Register of Historic Places in 1978, The Shelburne Inn has undergone extensive rejuvenation and expansion in recent years, and now has 16 antique-appointed guest rooms available to the traveling public. 

'This bed-and-breakfast inn, just a short walk from the dunes on the Long Beach Peninsula, has the distinction of being the oldest continuously operating lodging facility in Washington State and was named 1990 Best Inn of the Year by Uncle Ben's Inc.
