All of the original recipes (including the Chefs') were modified into lighter versions to help people lower their intake of calories, fat, saturated fat, cholesterol and sodium. This collection can help you adapt to and maintain a healthier approach to eating, while enjoying dishes ranging from "fast and easy" to more "gourmet."
Once the initial selection process was finished, the recipes were computer analyzed to determine nutritional content. Whenever the original recipe did not meet the lightened goals, the recipe was modified to reduce the fat, cholesterol and sodium. When necessary and possible, sugar and alcohol content were also reduced. The adjusted recipes were taste-tested again to ensure that they were still packed with flavor. The results were rewarding. Many were ranked as excellent, and as good as or better than the original recipes.
These recipes were contributed by Junior League members, their friends and families, and area professional chefs, with selections ranging from Louisiana classics and ethnic favorites to Southern traditionals.
Every recipe is accompanied by nutritional analysis information. A detailed section on "how to lighten" when cooking at home is provided at the end of the book following the "Something Extra" section. It is our hope that this collection of Louisiana favorites and the guide on light cooking will give you a delicious start to a new way of eating.
