Miss Blanksteen makes no claim for encyclopedic coverage of all the food of all the Russias, only very enthusiastically for the workability and delectability of the dishes selected, each of which has been prepared, tested, and eaten -- some many times over. Try them and you'll agree with Jane that though Nothing Beets Borscht, any number of Russian soups, as well as salads, meat or vegetable dishes, breads, cakes, fruit concoctions or drinks come in a close second.
