Description: Grilled steak, roasted rack of lamb, sauteed pork chops, braised pork ribs -- can meat be a part of a healthy lifestyle? Absolutely, according to the authors of The New Meat Lover's Cookbook. In the introduction, author Janeen Sarlin says "I love meat. I grew up on it, and I plan to continue eating it in healthful ways. That's what this book is about: eating moderate portions of nutritious, low-fat meats -- cooked with little if any added fat -- but with large, dollops of flavorful spices and seasonings."

Janeen continues in the introduction to explain the basics, of making meat part of a low-fat diet. She recommends cooking with high-quality, leaner cuts of meat like filet of beef, pork tenderloin, ground sirloin, and well-trimmed loin lamb chops -- they cost a bit more, but then you don't have to trim all the fat off at home, so preparing them is easier, too. Janeen cooks with olive oil rather than butter, and sometimes with no oil at all. And she suggests cooking with spice rubs, which add lots of flavor and no fat. Additional fat-reducing tips, as well as storage, buying, and cooking advice, are scattered throughout the book. Instructive line drawings illustrate difficult techniques, making the book easy enough for beginner cooks.

The recipes come next, more than 150 in all including grills, stews, sautes, roasts, pates, and a chapter on cooking with leftovers. You'll find healthy variations on meat classics, everything from Easter Sunday Ham to Traditional Osso Bucco. For more adventurous cooks, The New Meat Lover's Cookbook is filled with Janeen Sarlin's own personal, bold-flavored creations like Crusty Coriander Pan-Seared Veal Chops, Stuffed Lamb Chops with Sauce Madeira, Southwestern Grilled Pork Tenderloin, and Grilled Pesto Burgers, to name just a few.

If you're tired of serving the same old pasta and boneless, skinless chicken breast recipes for dinner, and your family has been asking why you "don't cook meat like you used to," then you need The New Meat Lover's Cookbook. As the authors explain, the days of feeling guilty for preparing pork, beef, and lamb for dinner are long gone and with this cookbook, your family will never know they're eating healthfully.
