Description: Many methods of cooking are used in Chinese cuisine: steaming, boiling, stir-frying, cooking in sauce, and so forth; but no matter what method is used, the kitchen usually ends up full of oily steam. The impression most people have of a Chinese kitchen is a crowded, hot, stuffy place full of all kinds of cooking smells -- and greasy. Just thinking about cooking and the chores that follow is enough to give anyone a headache.

The microwave oven is an instrument for heating food that is both convenient and clean. Cooking with conventional gas or electric stoves often results in a significant rise in room temperature, creating discomfort for anyone nearby. One of the biggest advantages of microwave cooking is that it does not raise room temperature. With a microwave, the actual cooking takes place in a restricted area, so the kitchen does not become grease-spattered during flash-frying, pan-frying, and baking. This saves a tremendous amount of cleanup time and work. So even if actual cooking time is sometimes the same with a microwave as with a conventional range, the microwave still offers a lot of other advantages.

People who buy microwave ovens often end up using them mostly for warming up leftovers or boiling water; they feel that a microwave is not suitable for making Chinese food. It is for this reason that the Wei-Chuan Educational and Cultural Foundation devoted over one year to researching and testing how to incorporate the advantages of microwave cooking into making delicious Chinese food.

In this book, we introduce the basic implements of microwave cooking, how to care for a microwave, and 62 specially selected main dishes, side dishes, and snacks. Each recipe was tested several times in our test kitchens, then retested and evaluated by a large number of consumers before being chosen for inclusion in this book. Each recipe was simplified as much as possible while preserving the original taste and character of the dish.

Busy people, especially those who work outside the home, will find the microwave oven a most useful piece of equipment in preparing delicious homemade Chinese food in the shortest amount of time.
