Description: Luby's Cafeterias traces its ancestry back to 1911 and a young man named Harry Luby, a former clothing merchant. Inspired by a restaurant he ran across while on a business trip to Chicago, Mr. Luby opened a cafeteria in Springfield, Missouri, which he called the New England Dairy' Lunch. 

As part of our 50th anniversary celebration, and in response to the countless requests we have received for recipes served in our cafeterias we created this cookbook. We hope it includes your favorites. Our sincere and heartfelt thanks to all of our loyal customers.
