They arc recipes that have been brought over from the many regions of Italy by mothers, grandmothers, relatives and friends -- and that are now cooked here in the New World in Italian homes. 

The recipes, in many cases, have been adapted for local ingredients, but in all cases they are ones that the authors, Maria Pace and Louise Scaini-Jojic, have cajoled from people all over North America and have then tested so that they can be duplicated in your kitchen.
