Description: St. Andrews Bay with its glittering waters escaping to the Gulf or meandering into its quiet bayous has attracted many over the years. All who have come here -- from the Spanish explorers who gave the Bay its name to the present day visitor -- have been drawn by the unique beauty of its peaceful shores lined with moss hung oaks, magnolia, and bay trees.
Along these shores fishermen could draw in their nets in the age old manner of St. Andrew himself or cast out into its depths to reap the abundance of shrimp, mullet, scamp, snapper, oysters, and scallops. Into this setting on St. Andrews Bay at the turn of the 20th Century, Panama City was born, thrived, and acquired a reputation for its gracious hospitality and leisurely living.
Within the leaves of this book, we have tried to capture the flavor of those early days with some traditional and contemporary recipes that we hope will enhance that reputation. To your enjoyment and the endeavors which this book will support, we dedicate Bay Leaves.
