In Gli Antipasti, Anna del Conte demonstrates that Italy's repertoire of appetizers and hors d'oeuvres is second to none. Pork products such as prosciutti, salami, and mortadelle make delicious starters accompanied by melon, figs, or a piece of focaccia, and a mixture of cured meats (ajjettato misto) not only looks marvelous but makes an ideal appetizer before a pasta.
Before a meat or fish main course a vegetable antipasto may be best, and she includes such regional favorites as grilled peppers and braised baby onions from Piedmont, and stewed eggplant in a sweet-and-sour sauce from Sicily. She also offers a fish carpaccio, a seafood salad, and antipasti based on bread, vegetable purees, and salads. Antipasti should not only harmonize with the dishes to follow but also look seductive, as they do here in Flo Bayley's illustrations.
