Description: There's a saying—"It's all Greek to me"—which, loosely defined, signifies something we don't understand. Unfortunately, this term might well be applied to some of the existing instructions for Greek cooking. The cookbook committee of St. Demetrios Greek Orthodox Church embarked on the project of compiling a definitive collection of tested recipes from the Hellenic world—all using standard measurements, commonly available ingredients and explicit directions. 

There are many different ways to prepare the classic favorites of Greek cuisine. In making our initial selection, we chose those recipes which seemed consistent with our purpose to present clear, concise and uncomplicated instructions. Good luck. And—as we say in Greek—kali orexi!
