Description: The connoisseur of regional cooking will give this book full marks. The recipes are all typically German, and they come from every part of Germany. This gives it a double value: first, as a contribution to what might be called culinary scholarship; and second, as an eye-opener to English cooks. Perhaps only the adventurous will try fruit or beer soups or some of the garnishings suggested, but who could resist methods which make potatoes, cabbage, white fish or the homely cooking plum into new and exciting dishes.
Mrs Howe gives ideas for sandwiches, soft drinks and punches, as well as soups, fish, meat, salads, sweets, cakes and pastries, sauces and garnishings. She restricted her choice of German recipes in only one way: the avoidance of anything that was clearly impracticable.
