Description: This book is a collection of Italian-style first courses based on my experiences over time. For example, I grew up in New England, so lobster was a big part of my childhood. That's why I put a great lobster dish in here.
When I worked for Mark Miller, he taught me to love quail. Also, when I moved to Northern California, I would see wild quail while mountain-biking in the headlands. So quail has a spot in the book. I base a lot of my food in history, so some of the recipes use an old recipe, but modernize it for today. Each recipe has a story, and I've included these stories throughout the book.
