These recipes were first published in the pages of Acadiana Profile, "The Magazine of the Cajun Country," from 1980 through 1987. Most of the recipes were obtained from their readers and from the Extension Home Economists who serve the homemakers throughout the Acadiana region.
This cookbook differs from others, too, in that it is only the second one on the market at the time of writing that featured recipes from all 22 parishes (counties) of the Cajun country. The other one, was also published by this organization and was the first volume with recipes from the magazine from 1976 to 1979.
Condition: Good condition. Cover has some light creases and wear.
