Description: 221 South Oak's Cuisine is classified as Modern Bistro, defined as fresh ingredients prepared simply and served in an intimate atmosphere. Eliza Gavin, executive chef and owner, has traveled extensively. On her 21st birthday she ate a camel burger for lunch, Emu pate for tea and kangaroo steak for dinner. In the fall of 1999, she began working at 221 South Oak Bistro in Telluride, Colorado and bought the restaurant a year later. Her work there represents the culmination of her various culinary experiences.
