This was one of many lessons Rubye Bumgarner was to learn from the beautiful Smoky Mountains that surrounded her home in western North Carolina, a small board-and-batten house that she and her husband, Ed, purchased around the time of the Great Depression. 

They called the house Sunset Farms, and they worked the land, but the Depression made it hard to earn a living. It was not an easy time to live in the mountains, but Rubye and Ed knew they were where they belonged and that they could adapt to their surroundings and circumstances. 

Reality seemed to intrude on their dreams when Ed was unable to sell a flock of spring fryers for even a fraction of what they had cost to raise. But Rubye had an idea -- and a can of shoe polish. She lettered a "Chicken Dinners" sign, erected it on the road in front of their house -- only one-quarter of a mile from the only road leading into the Great Smokies -- and suddenly they were in the innkeeping business. 

This book tells the story of Rubye and Ed's experiences as proprietors of what was once one of the best-known inns in western North Carolina -- a lodging place featured in Duncan Hines's Adventures in Good Eating as well as such magazines as Holiday, Redbook, and Vogue. It is also a behind-the-scenes peek into their kitchen, full of recipes for everything from Rubye's Cheese Soup -- a dish that had travelers driving two hundred miles out of their way for a bowlful -- to her famous Vinegar Pie and Sauerkraut Cake, delicious desserts that tourists asked for by name before they even got off the bus. Like the clientele, which included everyone from local factory workers to visiting royalty, the recipes from Sunset Farms are splendidly varied. In this collection, home cooking like Dandelion Greens and Corn Pone rubs elbows with elegant dishes like Stuffed Leg of Lamb, or a Raw Mushroom Salad introduced to Rubye by a Polish countess.
