Description: Like the islands themselves, the cuisine of the Antilles represents in a mingling of diverse cultures. The zest and tang of Southern dishes came with the Sephardic Jews from Spain, Portugal, and Latin America. The Dutch brought the exotica of Indonesia, as well as their own hearty, robust cooking. The piquancy of West Africa is also there. With this heritage, but with few ingredients for the islands produced little, early Antillean cooks developed a distinctive cuisine. Their traditional recipes handed down from generation to generation, may be sampled in these pages.
