Description: Anne Willan spends her life teaching cookery and traveling the world as one of today's best-known culinary experts. But on those rare evenings she spends at home with family and friends, she is no different from any other busy career woman who wants to put a good meal on the table but who does not want to spend more time than necessary in the kitchen. In this unusually personal book, Willan shares some of the repertoire she has developed to meet the challenge of preparing fine food while relaxing at home.

None of the recipes in this collection require that the cook be in the kitchen for more than 15 minutes, and for some recipes, the hands-on time required is even shorter. In some cases, the dish is served immediately after preparation; in others, a short burst of activity is followed by simmering, roasting, chilling or marinating until it is time to complete the process. In the interim, Willan suggests relaxing or catching up with the news of the day.

Willan has constructed each recipe in two ways. First is the conventional approach, with comprehensive instructions, discussions of ingredients and suggestions for equipment. This gives less experienced cooks all the information they need for successful results. At the same time, there is a concise, shorthand version that takes the more accomplished cook, or anyone already familiar with the recipe, through its execution efficiently, which may save even more time.

This is real food, properly cooked so that its flavors develop fully. And it reflects Willan's own preference for stylish and enticing international flavors. Many are her own versions of classics, given a little twist to turn them into memorable new dishes. There are chapters on starters & snacks, speedy salads, light lunch or supper dishes, and main courses that are meals in themselves and need no accompaniments. There is also a special section on dishes that can be prepared, cooked and served in even less than 15 minutes, and a delightful selection of hot and cold desserts.

Willan also provides a concise introduction that gives invaluable advice on general time- and effort-saving techniques, equipment, shopping and pantry items to have on hand for fast meals. There is a section of menu ideas using the recipes in the book to make meals for all occasions. Dramatic and colorful photographs illustrate the text.

There are other quick cookbooks, but unlike many of those, Anne Willan's does not sacrifice flavor for speed.
