When Yvon Hunckler joined Merle Norman in April of 1975, few of were fully aware of the culinary delights in store for us. We should have been warned, however, as Yvon's background was built on significant positions with such illustrious names as The Beverly Hills Hotel in Beverly Hills, California; The Grand Hotel in Vittel, France; The Grand Hotel in Birmingham, England; and the Hotel de Paris, located in Monte Carlo. And if that list is not impressive enough, consider these: the Restaurant "Le Vendome" Casino in Aix en Provence, France; the Restaurant Chantegrill in Geneva, Switzerland; the Tunisia Palace Hotel in Tunis, Tunisia; and The Grand Hotel of Oran, Algeria. With such training behind him, it is hardly surprising that first-time guests (or returnees, for that matter) constantly are taken with delighted pleasure when served the dishes which have become standard at San Sylmar dinners.
