Description: In 1991, the St. Louis Herb Society celebrated its golden anniversary by publishing How To Grow Herbs In The Midwest. Now, early in its second fifty years of service to the St. Louis community and especially to the Missouri Botanical Garden, the Herb Society presents its new cookbook. This book is dedicated to the belief that the use of herbs not only adds flavor and elegance to food, but brings delight to the preparation of it. Ninth century Charlemagne, himself an herb gardener, surely meant herbs when he wrote that "flowers are the friends of physicians and the praise of cooks." 

Every recipe in this book has been tasted and tested repeatedly by Herb Society members. Many recipes are original, some are adaptations. The recipes range from simple to complex, plain to fancy. All use herbs and other ingredients that are available locally and most can be grown in St. Louis gardens. Conscious effort has been made to cut back on butter, cream, and salt, etc. There are no set-in-stone rules about which herb to use with which food, although some suggestions have been made. Readers will make substitutions to suit personal tastes and fancies. This is part of the fun of herb cookery and a necessity where dietary needs are to be met. 

This is, after all, a cookbook, although we do include some background information, some growing tips, some herbal lore, as well as some comments and hints on the use and knowledge of herbs. The St. Louis Herb Society also publishes How to Grow Herbs In The Midwest and Lore And Legend Of The Culinary Herbs And Spices. Both are available from the Garden Gate Shop at the Missouri Botanical Garden in St. Louis.
