Here is a wonderful Southwestern Soup recipe that is rich in ingredients but really easy to prepare.

Recipe Instructions:

Ingredients:

  • 2 large cans of peel and cut (S&W) tomatoes
  • 1 chicken boullion cube
  • 1 beef boullion cube
  • 2 cups water
  • 1 can corn
  • 2 green peppers
  • 1 bunch cilantro
  • 2 single green onions (whole stalks) chopped
  • 1 cup chopped onion
  • Black pepper
  • 2 large or 4 small chicken breasts
  • 3 Italian turkey sausages (remove casing)
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground Cumin
  • Grated jack cheese 2% fat

Preparation:

  • Mix tomatoes, boullion cubes and water
  • Add drained corn
  • Add cut chunks of green peppers
  • Add chopped cilantro
  • Add chopped green onions
  • Add chopped onion
  • Add black pepper to taste
  • Add cooked chicken breast
  • Add browned turkey sausage
  • Add chili powder and ground cumin
  • Boil ingredients
  • Cook simmered covered 10 minutes
  • Top off with a handful of grated Jack cheese
