This Apricot Macadamia Nut Chicken is another family favorite from the recipe files of the Cookbook Village family. It is real easy to prepare. I love this one. Recipe Instructions:

Ingredients:

  • Chicken Breasts and/or legs
  • Garlic Salt
  • Pepper
  • Margarine
  • 2 tablespoons brandy
  • Jar apricot preserves
  • Macadamia nuts
  • Package dry apricots

Preparation:

  • Salt chicken breasts and/or legs with garlic salt, pepper
  • Dab margarine over chicken
  • Bake 350 degrees Fahrenheit for 50 minutes in baking pan 13x9." (Use foil to put it on in pan to bake)
  • Take equal parts apricot preserves and water and heat, stir, and pour over baked parts. (If apricot perserves and water seems too thin, pour some of the water out before cooking)
  • Sprinkle with margarine and chopped macadamia nuts
  • Add 2 tablespoons brandy if desired
  • Add cooked, drained dry apricots
  • Bake 20 minutes or until browned
  • Save any leftover sauce for later
