Description: "Taste jus' like I made em", this praise from (grand) mama when I was eight years old began my great relationship with cooking. She was ill in bed 'and instructed me on how to make biscuits from scratch. This sort of established me as the food doctor in the family. 

The nine years my family and I spent in West Africa in the late 70's and 80's gave me the opportunity to hone my cooking ability. The lack of food familiarity with the local food encouraged me to make American food staples such as peanut butter, mayonnaise, and cottage cheese; I made many other food favorites from scratch using local foods. 

On our return to the United States 20 years ago, I discovered my husband and I had high cholesterol levels and he also had high blood pressure. My mother, three brothers and one sister have since died due to cardiovascular disease (diabetes, high blood pressure along with high cholesterol), I believe that their deaths were early due to unhealthy eating and lifestyle choices. Since I am predisposed to cardiovascular disease because of family history, I began years ago to make more informed decisions about food choices. 

I have since read nearly everything about health. To sum it up, studies show we are partly what we eat African-Americans have a 50 percent greater risk of having a heart attack than the white population mostly due to lifestyle and food choices- frequenting fast food establishments, eating highly saturated fat foods, such as pig feet, pig tails and marbleized beef. We season our foods with fat backs, hog jowl and salt pork. This cookbook is not just for African-Americans; it is also for people from the south and all people whose lifestyles and food choices are unhealthy.
