Lagniappe by definition is "something given or obtained gratuitously or by way of good measure." This concept has been the basic ingredient of the Beaumont League's community fund-raising project, "Lagniappe." These monthly gourmet luncheons offer consistently fine meals which are creatively planned and prepared, elegantly staged and served entirely by the experienced membership. The overwhelming success of these Lagniappe luncheons year after year and an unending demand for those outstanding menus have resulted in this collection of eatables plus extras. 

The book attempts to incorporate conventional ingredients and techniques into a tasteful and sociable selection of alternatives for pleasing two hundred palates. The recipes herein represent original and traditional savored favorites, tested by competent and highly critical cooks. Sprinkled throughout the book are bonus "gifts" which denote the extra tips and hints. A special "Lagniappe" section offers exactly that -- full flavored menus, garnished with serving savvy and party possibilities.
