Passover Mandel Bread Recipe

My mother-in-law makes a wonderful Mandel Bread (similar to Biscotti for those of you unfamiliar with Mandel Bread). She always makes a great meal for the Jewish Passover holiday and this is one of the favorites at the table.

Recipe Instructions:

Ingredients:

  • 1 cup sugar
  • 1/2 cup oil
  • 3 eggs
  • 1 cup mazoh cake meal
  • 1 cup potato starch
  • 2 teaspoons orange juice
  • 1/2 cup chopped nuts
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Preparation:

  • Mix sugar, oil, eggs and add nuts
  • Add orange juice and dry ingredients
  • Chill 3 strips in refrigerator
  • 2 hours and then make 3 rolls (about 2" thick)
  • Sprinkle with sugar and cinnamon
  • Cook and slice and return to oven to brown (3-5 minutes)
  • Cook in greased pan in oven at 350 degrees Fahrenheit for 40-50 minutes
